Recipe for Frozen Yogurt Bark with Berries
Prep: 10 mins. | Total: 4 hours Serves 6 |
What You'll Need:
Ingredients
6 strawberries, hulled and sliced
1/4 cup pecans, raw, crushed *customize this! Sub with other nuts, or leave out!
1/2 cup blueberries
2 cup Greek yogurt, full-fat
1 Tbs maple syrup
Salt, to taste
Supplies
Parchment paper (save time with Reynolds pre-cut cookie sheets!)
Directions
Prep
Line a shallow baking pan with parchment paper.
Slice strawberries, halve raspberries, and crush pecans.
Whisk together yogurt, maple syrup, and a pinch of salt.Preheat griddle to medium. If using a non-stick skillet you can wait to warm until the batter is complete.
Make
Spread the yogurt over the parchment paper in the baking pan.
Cover with berries and sprinkle with crushed pecans.
Place in the freezer for at least 3-4 hours to firm.
Remove from the freezer and break into pieces using a chef's knife.
Cooking Tips
You can use any type of berries you like, fresh or frozen.
Feel free to substitute the pecans with other nuts such as almonds or walnuts. Or go nut-free and don't use nuts at all. Sub nuts with chocolate chips or hemp hearts.
Adjust the sweetness to your liking by adding more or less maple syrup.
You can make this recipe vegan-friendly by using a vegan plant-based yogurt.
Get creative with toppings! You can add shredded coconut, chia seeds, dark chocolate chips, and more!
Store using Tupperware or a freezer bag in the freezer so that you can quickly reach for a cool, sweet, and healthy treat during those hot summer days or any time of year! When freezing, layer with parchment paper to prevent sticking.
