St. Patrick’s Day Recipe: Green Edamame Hummus with Veggies

EDAMAME!
Are you looking for a fun and festive way to celebrate St. Patrick’s Day? Why not try making some green hummus and serve it with veggies and your family's favorite dippers (like crackers, pita chips, or pretzels)!
Make it fun and magical for the kids. For example, say something like:
Did you know that green hummus is one of Leprechauns' favorite foods?
Look! A leprechaun must have come and turned our hummus green!
This healthy and delicious snack is perfect for all ages, and it’s a great way to get in some extra veggies, protein, fiber, and nutrients (edamame is a good source of protein, fiber, potassium, and iron!).
Whether you're serving up a snack for the kids or looking for a unique appetizer to wow your guests, this green edamame hummus is sure to be a hit.

➡ Ingredients:
3 cup edamame, shelled, frozen and defrosted
2 cloves garlic, minced
2 lemons, squeezed (1/4 cup juice)
2 Tbsp tahini
1/2 tsp salt
1/4 tsp cumin, ground
1/4 cup water, or more as needed
4 scallions, chopped
➡ Directions:
Prep
Crush garlic/juice lemons/chop scallions.
Make
Add edamame to food processor, reserving a few beans for garnish.
Pulse until finely chopped. Add garlic and pulse several more times.
Add lemon juice, tahini, salt, and cumin and run processor until smooth, adding more water as needed to thin.
Pulse in scallions.
Season with salt and pepper to taste.
Place hummus in bowl, garnish with reserved beans or a few cilantro leaves. Drizzle with olive oil if desired. Serve with crisp, raw, green vegetables like sliced or stick-shaped cucumbers, zucchini, celery, broccoli, snap peas, and green beans.

Feeding Therapy Tip for Picky or Hesitant Eaters:
If using this recipe for a child with picky eating, use the edamame hummus as paint! Remember not to pressure your child to eat the hummus or dippers. Instead, model dipping the veggie or favorite dipper (like cracker or veggie straw) into the hummus, and then draw a picture with it on a plate or clean area of the table. Let a hesitant child simply watch you, and let a more adventurous feeling child join you in the fun! You can also role play with the dippers, such as having green veggie straws "go for a walk" in the green dip - and sing a fun St. Patrick's Day song while playing!
