Easy Apple Pie Overnight Oats

MAKES: 2 servings PREP TIME: 15 min TOTAL TIME: 12-18 min
Ingredients
2 apples, peeled and chopped small apples
1 tsp lemon juice
1 1/2 Tbs cinnamon, divided
1/2 cup rolled oats
1/2 cup unsweetened almond milk, oatmilk, or your preferred milk or milk alternative
1/2 cup non-dairy plain yogurt (or an additional 1/2 cup of milk)
2 Tbs chia seeds
1/4 cup add-in (walnuts, almonds, chocolate chips, carob chips, fruit, etc.), chopped
1/4 cup optional add-ins, such as chocolate chips (we love Enjoy Life brand), ground flax seed, hemp hearts, coconut flakes, walnuts or other nuts, chopped fruit pieces, etc.
Directions
Prep
Peel and chop apples.
Chop walnuts or your add-in(s) of choice, to your preference.
Make
In a small pot combine, chopped apples, lemon juice, and 1 tablespoon cinnamon. Heat over low heat until apples soften. Remove from heat and let cool completely.
In a bowl, combine oats, almond or oat milk, yogurt, chia seeds, and remaining cinnamon. Distribute oat mixture evenly between two mason jars (we love these super convenient overnight oats mason jars!). Add add-in(s) evenly over the oats, then top with the cooked apples.
Seal with a lid and store in the refrigerator overnight.

Tips
Old-fashioned oats (also called rolled oats) are the best type of oats to use for overnight oats. They absorb liquid better than other types of oats, resulting in a creamier texture. Quick oats and steel-cut oats will also work, but your overnight oats will be less creamy as a result. When making overnight oats, it's important to use the correct ratio of oats to liquid so follow the recipe carefully. Using too much or too little liquid will result in either mushy or dry overnight oats.
