My Favorite Banana Oatmeal Chocolate Chip Cookies

If you’re like me, then you’re always looking for creative ways to sneak health benefits into sweets and treats.
Good news: this kid-approved cookie recipe is simple, delicious, and healthy! It contains no added sugar (except for the optional chocolate chips or your preferred add-ins), and is a good source of fiber. We love eating these as part of snack or as a quick-grab in the morning paired with milk (we drink protein-containing oat milk due to food allergies) and a piece of fruit.
And if you have food allergies and/or sensitivities, it can be made top 8 free by using your favorite egg substitute (I love replacing eggs with flaxseed).
Ingredients:
1 large (8" to 8-7/8" long) bananas, soft and ripened
1/4 cup refined canola oil (such as Spectrum Naturals Oil Canola Refined)
1 whole large egg
1 tsp of vanilla extract
1.25 cups of gluten-free quick oats, dry
3/4 cups of whole grain oat flour (I use Bob's Red Mill Whole Grain Oat Flour)
1/8 teaspoon of baking soda
1/8 teaspoon of salt
0.5-1 cup of chocolate chips or your preferred add-in (I use Enjoy Life Semi-Sweet Mini Chips)
Instructions:
Preheat oven to 350 degrees F
In a large bowl, mash banana and mix in oil, egg, and vanilla
In another bowl, mix together the oats, flour, baking soda, salt, and cinnamon
Slowly add the dry mixture to the wet mixture while gently stirring
Gently pour and stir in the chocolate chips or add-ins (optional)
Drop dough by rounded tablespoons about 2 inches apart onto a lightly greased baking sheet
Bake 12-14 minutes or until light brown. Cool slightly; remove from cookie sheet. Let stand on wire rack until cooled
These pair well with a protein-containing food like milk, a milk alternative, yogurt, or cottage cheese. Enjoy!
