No-Bake Oatmeal Energy Bites

These oatmeal energy bites are simple to make, taste great and perfect for the whole family. They are bite-sized, compact (hence the name!) and make for a perfect grab-and-go snack or treat.
I love snacks that have great flavor but aren't too time consuming (like complex ingredients or long baking times) to get great flavor. That’s where these NO BAKE oatmeal energy bites come in handy! Plus, they are easy to customize with whatever your favorite mix-ins are. Just follow this simple formula:
➡️Oats (old-fashioned, quick or a combination of both)⠀
➡️Nut Butter (anything goes) or alternative for allergies⠀
➡️Sweetener of choice (liquid)⠀
➡️Add-ins like dried fruit, nuts, flax meal, or mini chocolate chips⠀
This is also a great recipe for kids because the ingredients are simple and not-so-messy! Getting kids involved in the kitchen has SO many benefits (read more here) - importantly, it makes them more willing to try new foods, eat more nutritious foods, and improves their relationship with food.

➡️Ingredients⠀
✅1 cup rolled oats (gluten free, if needed)⠀
✅1/2 cup peanut butter, almond butter, Sunbutter, or your preferred alternative⠀
✅1/2 cup ground flax seed or hemp hearts
✅2 tablespoons maple syrup⠀
✅1/2 cup chocolate chips (we love Enjoy Life brand)⠀
✅unsweetened coconut flakes, optional⠀
➡️Directions⠀
✅Add all ingredients to a large mixing bowl and mix until incorporated. If needed, add liquid [your milk of choice] a tablespoon at a time if batter is dry.
✅ Optional: refrigerate dough for 30 minutes before spooning into bite size portions. This will make it easier to form small balls.
✅Using a small ice cream scoop, two spoons, or your hands, portion out into 24 bites.
